What Every Prep Chef Should Know About Cutlery

Ah, the prep chef, happily whacking away with a steady rhythm. You have no worries about how the Hollandaise sauce is going to turn out, nor how fussy those customers at table seven are. All you have to worry about is making food the right consistency before passing it off to someone else. You can go through the day in an almost Zen-like calm, just tending to the little stuff.

The best restaurants will either let you pick your utensils, or have a good selection already handed down from previous prep chefs. If you're picking out your own, you may be tempted to call that 1-800 number and just get a set of everything (with the bonus turnip twaddler) and be done with it, or you might take your career seriously enough to spend some time seriously picking your tools. Good kitchen knives are never cheap, but they are a career-long investment. Buy wisely and your staff will be using them 50 years from now - to celebrate your restaurant's golden anniversary, of course!

Chef Knife

The best-quality knife will be made of either stainless steel or a high-carbon steel and have a sturdy handle. The handle is preferably made of poly-carbonate or nylon instead of wood. Make sure that you get a plain edge, because those wonders that "never need sharpening" just do not work.

It is also recommended that you pass on the complete sets sold by the major knife makers; they usually contain at least one knife you will never use. Instead, buy knives one at a time or in small sets and get the best quality you can afford. Some brand names chefs swear by (and this is an unpaid endorsement!) are Wusthof-Trident, Henkles, Sabatier and Friedrick Dick.

The three knives that you will find essential in every kitchen are a 3-to-4-inch paring knife, an 8-inch chef's knife and a 7-to-10-inch slicer.

The paring knife is definitely one of the most overlooked tools in the kitchen. It not only gets the peeling done, but it also can do a lot of the slicing and dicing usually reserved for the more frequently used chef's knife. For some reason, every time I watch another chef, they reach for a knife that's longer than they need.

A good chef's knife will take care of most of your dicing and chopping magic. It is indispensable if you need to prepare fresh garlic. Just lay the flat of the blade on top of the clove and hit it with your hand, which will smash the clove and split the skin, making removal of the garlic flesh a breeze. An 8-inch blade works best, unless you are very small or very large. Then a 6-inch or a 10-inch knife may be in order, to account for the size of your fist.

Look for a chef's knife which is balanced well with a blade that is wide and rather heavy at the butt, near the handle. A slight curve on the blade's edge will give you a good rocking action while chopping and make the knife much easier to use.

The slicer is used mainly for carving and slicing meat. It's also good for mincing spices, since you can just pitch that handful of chives onto the cutting board and rock the big knife with the curved blade back and forth over it, with both hands on top.

These three knives are good building blocks, but they're just the start. Next, you want to add a bread knife, a bird's-beak parer for peeling and coring round fruits, a second paring knife, and a 6-inch sandwich and utility knife.

To care for your knives, you should wipe them clean with a damp sponge, dry them off with a dish towel, and store them in a knife block, with the blade always down. Never hand them to the dish washer, because the knives will bang against other silverware and get damaged. When using any knife, make sure that the blade lands on a relatively soft surface, such as wood or plastic, rather than on a surface such as the metal surface or ceramic. This is because constant striking on a hard surface will dull the blade rapidly.

Knives should be washed by hand and dried immediately after each use. Because wood tends to swell, it is not a good idea to immerse knives with wooden handles in water for a prolonged period of time. Rubbing mineral oil on the knife's wood handle periodically will maintain their luster. Stains on blades may be cleaned with a mild scouring powder, or with a mildly abrasive pad - never steel wool!

Acidic foods like lemon juice, vinegar, or mustard, should not remain on the blade after use as they will cause discoloration. Your knives should always be cleaned as soon as any job is completed. Knives should be stored in a drawer or in a knife block once they have been cleaned and dried. They should not be stacked, for purposes of both safety and proper edge care.

Remember your safe food handling! To avoid cross-contamination of bacteria, knives should be cleaned before they are used for another product. Most especially they should be kept to separate uses of meat and vegetables for one meal, and never use the same knife for both raw and cooked meat.

Woodworking With Monterillo, a Rare and Exotic Hardwood

Just as a chef must assemble quality ingredients before creating a signature dish, so the woodworker must pick and choose the pattern, the tools, and the wood or woods from which to create a masterpiece. Unlike the chef's creation, which will be eaten and remembered, the finished object a woodworker creates is intended to be utilized over a long period of time. Ideally, the end result is beautiful, functional, and will stand up to the task assigned. Selecting the best wood for the project is an important part of this creation process, and the woodworker will do well to choose wisely. It is as important to have the right wood as it is to use the appropriate tool.

Monterillo is one of the many exotic hardwoods available to the woodworker.

Monterillo is a dark, durable wood that is food grade safe. It is considered both rare and exotic because the trees from which it is derived seldom grow large enough to produce lumber sized boards. This greatly limits the availability for large projects, but the wood is prized for its natural beauty and great durability. Somewhat ironically, the qualities for which it admired also provide a challenge to the woodworker. While not a wood for a novice woodworker to begin with, this rare and exotic hardwood has durability and beauty that lends itself well to any number of projects.

This is not a wood for a beginning woodworker, in part because of the relative expense of the wood itself, but also because of the properties it exhibits when being worked by hand or by machine. On the wood hardness scale, Monterillo tends to be found on the harder end. This makes it extremely durable, but difficult to work. The coloration and interesting grain, however, make it worthwhile for projects that can feature those natural qualities.

Monterillo is often found in items of jewelry such as earrings, beads, or pendants, and can be carved into exotic hair combs. Monterillo is also often used to make knife blades and pen barrels, small trinket boxes, and musical instruments.

This is a food safe wood, so it can be used for items intended for kitchen use, such as cutting boards, wooden utensils, and other items which may come in contact with food. This is an extremely important factor in choosing the wood for any of these useful projects, as not all hardwoods are safe for projects involving the kitchen.

This precious hardwood, because of the rarity, tends to be among the more expensive of woods available, and so is more likely to be found in small projects, or as an accent when objects are intended to be completed with only an oiled, or rubbed finish. One would never use Monterillo in a project intended to be painted.

When shopping for Monterillo, be aware that it may be found under other names. For example, because of the unique grain coloration which can resemble the stripes found on a tiger, Monterillo is often called Tiger Rosewood. It is occasionally also referred to as Ecuador Rosewood. Regardless of name, this is a fine wood which can add great beauty to the finished project, and is a favorite of many experienced woodworkers around the world.

The Only 4 Cooking Knives You Need

There are plenty of cooking knives for sale on late night TV. You've seen the info-mercials. These amazing knives cut aluminum cans and shoes! I've been cooking for a long time, and I've never had to cut a can or a shoe. What makes this the test of a great knife?

I saw a TV commercial that offered a 26 knife set. It came with 12 steak knives. Again, when has anyone had to cook steak for 12 people in there home? Rarely, I'd say.

You don't need an entire set of knives to be a great cook at home. Nor do you have to spend a lot of money on cooking knives. You need only 4 basic knives in your kitchen:

1) Chefs Knife - The chef's knife will complete 80% of the cutting tasks in your kitchen and will eliminate every chopper/dicer device sold on TV. It has no moving parts, it wipes clean easily, and with the proper technique, is the safest instrument in your kitchen.

The chefs knife has a tapered blade, wider at the heal and thinner at the tip. Rather than slam the knife against the cutting board repeatedly to chop items, the best was is with a "tip-fulcrum" method. This is where the tip of the knife stays on the cutting board and rocks back in forth with the heal doing the cutting.

2) Serrated Slicing Knife - This is a long knife with a serrated edge or "teeth". You might call this a "bread knife", and it can certainly be used for bread. This knife is used for items that the downward weight of the chefs knife would crush, like tomatoes or slices of bread.

The slicing knife is best used with one long stroke. Just because it has teeth doesn't mean you should use it as a saw. One slice makes an more certain and attractive cut.

3) Boning Knife - This is a 5 to 7 inch knife with a thin blade and a sharp tip. It's used ONLY for raw items. This is the knife for removing the fat from chicken breast or the silverskin from cuts of meat.

The boning knife should be the sharpest of all your cooking knives and used in a single, smooth stroke to avoid giving raw products a "hacked-up" look.

4) Paring Knife - A 3 to 5 inch small knife that's used for peeling, skinning, or close-up carving of vegetables. It's the only knife used with the sharp blade held toward your face. Items are pushed past the blade with the thumb of your knife hand.

Imagine cutting the green caps off strawberries. You'd set the knife against the crown of the berry and push the fruit under the blade to remove the cap.

If you are impressed with cooking knives that cut cans or shoes, you really need to get a better night's sleep. If you are looking for the proper tools to take your cooking from fair to fantastic, then just the 4 basic knives I've mentioned will have you well on your way without spending a lot of money.

5 Cooking Tools Every Beginner Chef Should Have

Many food-obsessed people think they need to have a kitchen full of all the latest appliances and fancy kitchen tools.
