You have the choice of the standard high carbon steels to Stainless Steel and some of the newer exotic ones. Of course the steel is not the complete picture, you must consider the construction of the knife and was the steel properly heat treated.

Also consider what you might be putting your knife through and the environment you live in. It is a surprising fact that even chefs make big money. There have been surveys conducted to learn how much the net worth of several top and well known chefs is across the globe. This list was released by Forbes, with the top ten celebrity chefs in terms of money.

All of us humans live on food - And the world's interest on food has risen dramatically over the years of human dominance. Rising Apprentice Chefs has shown their capability to craft the culinary industry to their creativity for the general public for years now, and as time pass, things just got better. Here are some tips for Head Chefs or those who're in the managerial position.

Knife Basics Knife isn't necessarily the most important thing in the kitchen, but it's fairly important. Make sure your apprentice chef knows his/her knife skills well. For example: Fillet a fish (with a fillet knife) well, when to use a knife on vegetables and when not to, how to sharpen a knife, different types of knives for different uses, using a saw to separate/cut through thick bones, how to store the knife, etc. If you break these general topics down, you'll be hunted with tons of more knife basic skills. Kitchen Hygiene & Safety Practice and HACCP Kitchen hygiene (and personal hygiene) is one of the most important things to remember, follow and abide by in the kitchen. Failure of this implementation can lead to unnecessary loss and damage to the restaurant's reputation, food quality and so forth. Keep in mind that under this topic would also include, but not limited to: Storage, Preparation, Cooking, Garnishing, Serving, Mise en Place (Pre-preparation), Kitchen Hygiene, Utensils and Equipments, Gas & Oil Managing, etc. Food Preparation Basics Food preparation basics include, but not limited to: Food handling, cutting & slicing, portioning & tearing, seasoning & tasting, pre-cook & pre-garnish, using the slicer machine and automated meat portioning machine, using salad dryer, vegetables and meat handling & storage, etc. Preliminary basic skills should be applied before teaching robust techniques like flipping the pan or making roulette Eggs with Cheese without using your hand, thong or spatula. Communication & Stress Handling Communication here as in communicating with your colleagues, how to handle customer's special requisition (like Vegetarian Carbonara), how to talk to customers, etc. Stress here meaning when times are hard - How to handle food nonchalantly when a restaurant is busy, how to obey the Kitchen Barker although he/she is wrong, what to do when a particular food item has depleted, etc. Kitchen Management Kitchen management is extremely crucial especially when it comes to apprentice chefs - Due to the fact that there are much misunderstanding - And we want to combat that, plus, give value in terms of kitchen knowledge. Teach your apprentice chefs how to take orders, how to calculate daily food costs, how to receive invoices (and raw food materials), how to handle suppliers, understand payment terms, manage the kitchen like a boss (diplomatic, please), etc. When you give better insight to your Chefs regarding this, (with continuous kitchen management training), they will obey, understand and work better for you.

8 Tips For Improving Your Belly Pork Crackling

True cheapskates tend to cook rather than eating out for obvious reasons.

And one of the cheapest cuts of meat is Pork Belly, which also happens to be extremely tasty due to the high fat content which tenderises the meat.

Another popular feature of Belly Pork is the skin, which when done correctly becomes a delicious crunchy treat known as crackling. Unfortunately, good crackling can be hard to make, and can often become so hard that it is virtually impossible to cut with a knife.

Perfecting crackling is not a straightforward process, as each cut of meat is different, and ovens tend to behave differently. Good chefs know how their ovens behave and adjust accordingly. And the greatest chefs cook using solid techniques based on solid theories, rather the religiously following recipes.

So in order to help myself and others perfect belly pork crackling, I've compiled a list of crackling tips that I've gathered from various places. If you follow a belly pork recipe but the crackling doesn't quite come out right, please try some of these tips, and let me know how they work for you.

Score the skin into squares of width 1cm. But don't cut down to the skin. Alternatively, use a short sharp knife (such as Stanley knife) and just scratch the surface all over. Rub lots of salt into the skin, especially the cracks. Prepare the pork the day before you cook it, and dry it out uncovered on the top shelf of your fridge. Rub vinegar into the skin before you place it into the oven. Then at and dry it with kitchen towel (this might be more suitable for Chinese roast pork recipes, rather than western recipes). When you first place the pork in the oven, make sure the oven is as hot as you can get it, and turn the heat down after 20-30 minutes. Place the pork on the top shelf where the oven is hottest. Place the pork on an oven grill tray above some water, to prevent the skin from drying out.

How to Choose a Knife Sharpener

Knife sharpeners are very important if you want to keep your knives in top condition. There is a wide range of sharpeners available, including small hand-held blocks to large electric sharpeners. All knife sharpeners are designed to restore the blade of a knife to its original sharpness. Since most people are not professional chefs with a lot of experience sharpening knives, they do not know what to look for when purchasing a knife sharpener. However, a knife sharpener is a very useful tool to have around the house. Choosing the best knife sharpener is difficult if you do not know how to compare different types.

The biggest difference between knife sharpeners is whether they are manual or electric. If you plan to sharpen many knives, opt for an electric sharpener. Electric sharpeners work very quickly and will not tire your arms. These range from relatively small countertop sharpeners to large models meant for industrial use. If you have the space, consider an electric sharpener. If not, look into sharpening stones or sharpening steels, because these are easier to store in small kitchens. However, manual sharpeners do require more work on your part to draw the blade across the sharpener.

Most knife sharpeners should be able to last you at least a few years, depending upon how often it is used. All sharpeners work by grinding the blade against a hard, rough surface. The roughness of this surface is measured in grit. Most sharpeners include two sides; one in a rougher grit for pre-sharpening, and a finer grit for honing the blade. Some stones may be sold in just one grit on both sides; purchase two different stones to fully sharpen your knives.

There are many different surfaces used for these sharpeners, including stone, ceramic, diamond, and steel. Ceramic stones are known for providing a very sharp edge, but may be fragile, and can break if dropped on a hard surface. Diamond sharpeners provide a sharp edge and do not wear down quickly. Carbide sharpeners should be used on a knife that is not extremely dull. A steel will quickly reshape, but not resharpen, frequently-used knives. Natural stone is often the least expensive choice, but frequent use can wear down the center of the stone.

Dicing a Bell Pepper - The Quickest Hand Chopped Method

Introduction:
We have all seen countless cooking shows where the experienced chef dices a vegetable in nano-seconds, most of us would probably lose a finger if we attempted such rapid knife work so this article details my method for cleaning, coring, slicing and dicing that old salad mainstay - the bell pepper!

First you need to remove any sticky labels from the bell pepper, if a label does not come away cleanly you will need to use a small sharp knife to remove the skin with the glue, you will not be able to wash all of the label glue away and it tastes horrible.

Wash the bell pepper thoroughly under a cold water faucet and dry off with a piece of kitchen paper. Repeat this step for all of the bell peppers you will be preparing.

Coring

This is the clever part;

1/ Using a short sharp knife cut around the top of the bell pepper about a 1/2 inch down from the stalk in a complete circle, however, do not remove the top section yet.

2/ Cut around the base of the bell pepper, again about a 1/2 inch from the bottom of the bell pepper in a complete circle.

3/ Now you can remove the base of the pepper and twist the stalk of the pepper, this will remove the top section along with almost all of the core, including most of the seeds!

4/ Now just wash the hollowed out bell pepper under a cold faucet and trim back the core edges with a sharp knife. Wash out any remaining seeds.

The bell pepper is now cored and ready for slicing;

Slicing & Dicing

1/ Place the bell pepper on a cutting board and cut it in half from top to bottom.

2/ Take each half and slice strips about 1/4 inch wide.

3/ Take all of the strips and slice them into 1/4 inch cubes.

Congratulations, you have just sliced and diced your bell pepper like a professional without the need for any of the fancy chopping action!

German Chef Knives Vs French Chef Knives

In any well equipped home kitchen or restaurant kitchen, the knife which is most used will always be a good chef knife.

A good chef knife is usually has a blade length of between 6 and 12 inches, and width between 2.1 and 2.7 mm.

Even though getting used to working with a chef knife may be a bit scary (due to the size of the blade), it is highly recommended for any chef or home cook. Working with a normal kitchen knife, is ok for small jobs, but it will become tiresome after a while.

Once you get used to working with a proper knife, you understand how much easier the work is and how much faster things get done.

In the west, there are two main styles of chefs knives:

The French Knife has a very long history in cooking schools, because of the fact that is has a curve towards the tip of the blade.

This curve makes the slice, dice, or chop motion move away from the body in a forward wave motion. Most cooking schools teach this manner of slicing because it is a safer way of cutting and because it makes the cutting motion seem effortless, which when you do get the forwards wave motion done right, it does become that (effortless).

Once you get used to working in this manner, it becomes very easy to slice a large amount of food effortlessly and very quickly.

In contrast to the French Knife, The German Chef Knife has a straight blade all the way to the tip.

This type of blade is used to cut in an up and down motion, making it less of a wave motion, and more force is needed to cut through the food.

This does not mean that the French chef knife is better then the German chef knife.

Both knife types are equally acceptable and every chef will pick the shape which compliments best the way he prefers to prepare his food.

In my opinion, the best length for a chef knife is 8 inches, but again, this is completely subjective, and every chef will use the knife he or she is more comfortable with.
