Before your asparagus is ready to be prepared for cooking, you need to first understand how to clean asparagus the perfect way as crops and plantations are never free from dirt and unseen bacteria or particles. The washing process may not be too difficult.

While washing them under the flow of water, hold the underneath end of the stem in one hand and bend it gently with the other hand. The stem will break at the tender location and the broken ends can be used for soups. Once you are done with the stem-breaking, rub the asparagus gently. Turn them upside down to clean the tips of the stalks.

After the washing process you will need to dry the asparagus. The easiest drying method is to roll them between two clean kitchen towels. You can cook them in a whole or cut them into smaller pieces for frying or other means of cooking.

Filet mignon is French, of course, with filet meaning "thick slice" and mignon meaning "dainty." Filet mignon comes from the small end of the tenderloin (called the short loin) which is found on the back rib cage of the animal. This area of the animal is not weight-bearing, thus the connective tissue is not toughened by exercise resulting in extremely tender meat. This also means that the meat lacks some of the flavor held by meat that has the bone attached. In order keep the flavor, you must cook filet mignon quickly. This can be done a variety of ways, including broiling and grilling.
It should never be cooked beyond medium rare, because the more done it is, the less tender and more dry it becomes and the more flavor it will lose. You should always use a dry method of cooking, even when it will be a quick method. Methods of cooking that are dry are such types as roasting, pan frying, grilling, broiling, etc. Since this cut of meat is more dry than others, you will not want to cut the meat to check to see if it is done. Instead, you should touch it. The touch-method of checking is not as hard as it may sound:

1. If the meat feels hard or firm, it is too done.

2. When the filet mignon is soft when you touch it and your finger leaves an imprint, it is rare.

3. If it is still soft, but leaves no imprint, and is slightly resilient, then it is medium rare (best for this particular type of meat).

The reason filet mignon is often wrapped in bacon (this wrapping is called barding) is because this particular cut of meat has no layer of fat around it. The bacon not only adds extra flavor to the filet mignon, it also gives it the fat necessary to keep the meat from drying out. This is a concern since the strips are so small in filet mignon and they have less fat than most cuts of beef.

What to serve with Filet Mignon

Since the flavor of filet mignon tends to be quite mild, many people prefer to serve it with sauces, either smothering the beef or as a dip. There are many different choices for the best sauce for filet mignon and most depend solely on the person's particular flavor preference. Some consumers prefer to have a certain type of steak sauce for dipping and some may prefer a marinade to add flavor during cooking. Either of these can turn out well.

Wines & Filet Mignon

There are many different types of wines that are good to serve with filet mignon, and determining which one will go best with it depends largely on the flavor of the sauce. This is especially true if the sauce is rather strong, or has a flavor that is stronger than the filet mignon itself. The best wines to match with filet mignon are dry, red wines such as Merlot. If your preference is a sweet wine, you may want to consider trying a White Zinfandel (if this is your choice, though, you will not want to use very much pepper on the filet mignon). If you are a white wine drinker, the best match for filet mignon will be a rich Chardonnay.

Tips for cooking Filet Mignon

-When selecting tenderloin or slices, choose the lighter color over dark red. This indicates more marbling which makes it more tender. This cut is so tender that it should never be cooked beyond a medium-rare stage. The longer you cook it, the less tender and more dry it becomes.

-Use a dry, high heat method such as broiling, roasting, pan-frying or grilling for this tender cut.

-Whole tenderloin is wonderful to stuff or bake en croute (in savory pastry).

-Cutting into the meat to check doneness lets precious juice escape. Use the touch method. Press the meat. If it feels soft and mushy and leaves an imprint, it is rare. -If it is soft, but slightly resilient, it is medium-rare. The minute it begins to feel firm, it is overdone.

-Since the tenderloin has no surrounding fat tissue, it is often wrapped in a layer of fat (called barding) such as suet or bacon to keep it from drying out. Likewise with filet slices. The barding also adds flavor.

-Cubed tenderloin is a popular choice for fondue hot-pots and shish-kebabs.

-To ensure even cooking when roasting the whole tenderloin, the small end should be tucked up and tied or trimmed for other use.

How To Prepare Mirepoix Vegetables

Mirepoix vegetables are an essential part of French cuisine. Mirepoix is a combination of finely chopped onions, carrots and celery, with a proportion of 50% onions, 25% celery and 25% carrots, which is used to add aroma and flavor to soups, stocks and other foods. They are typically sauteed with butter before the other ingredients are added, and herbs and cubed meats may be included with the mirepoix. But mirepoix may also be added once the dish is finished, in order to refresh its flavors.

Vegetables for mirepoix must be finely chopped, since this allows the vegetables' flavor and aroma to be quickly released into the food. Depending on what food the mirepoix will be used with, the vegetables can be chopped as coarsely as one to two inches or as finely as 1/2-inch. However, it is very important that the pieces be as uniform as possible so that they will be cooked evenly. Many chefs also prepare the mirepoix vegetables in advance of when they will actually be used, and then store them in the freezer since they can stay fresh for several days after they've been chopped.

Preparing onions and carrots for mirepoix involves a cutting technique called brunoise, which involves chopping them into very small pieces. To chop carrots for mirepoix, cut the four sides and the tip to make the vegetable into a roughly rectangular shape. Then cut them into very thin, even slices (a technique called julienne). Hold the slices together, then turn the carrot ninety-degrees and start dicing it into tiny squares. For onions, peel a bulb and then cut it in half, slice off the top and place the flat side down on the cutting board. Then cut it into thin slices. Make two horizontal slices which divide the onion roughly into threes, making sure to leave a little allowance at one end to help keep the onion together while it's being sliced. Then dice the onion by making vertical cuts.

Cutting celery for mirepoix vegetables is a similar process to cutting carrots. Prepare the celery stalk by removing the top and bottom part. Then make long lengthwise cuts across the stalk by placing the tip of the knife into the stalk and slicing downwards to create thin matchsticks. Then start dicing the celery. When you're first dicing vegetables for mirepoix, start by using manageable sizes since making the brunoise cuts can be tricky, then slowly move up to bigger ones.

Quick Napoleon Dessert Recipes

A traditional Napoleon is a French dessert made from layers of puff pastry spread with a vanilla pastry cream. The top of the rectangle or triangular shaped sweet is drizzled with chocolate and or dusted with powdered sugar. Historians say that the Napoleon was created by a Danish royal chef in honor of a visit by a French emperor. And that Emperor Bonaparte's defeat at Waterloo was the result of an overindulgence of his now famous namesake pastry.

You may have a hard time distinguishing after eating a Napoleon what part is the best part. Is it the puff pastry or the pastry cream? I think all of the flavor combinations work very well together, so, I say all of it! This is a very quick and easy dessert recipe, and you will not spend all day in the kitchen. We are going to take the shortcut method and make it work for our recipe.

Making puff pastry from scratch is not an easy task to undertake. It is a labor and time intensive endeavor. Perfectly chilled ingredients, repeated rolling to the correct thickness, and precision folding are the keys to faultless puff pastry. Not to mention working in a kitchen that is not humid. The meticulous rolling and folding, along with the moisture in the butter, creates steam which causes the dough to puff and separate into the flaky layers that the pastry is known for. Some chef's recommend anywhere from thirty minutes to two hours chilling time between rolling and folding. Consider that the roll, fold and chill process is done four times, you need to block off two to eight hours to make puff pastry. Or, take a trip to the frozen food section of the grocery store and buy it.

Ready made puff pastry is available in sheets or shells. To thaw it at room temperature takes about thirty minutes, in the refrigerator about four hours. It will keep in the refrigerator up to two days. When shaping the dough, work with one sheet at a time, refrigerating remaining sheets until ready to use. As with all dough handle as little as possible. A pastry wheel, pizza cutter or sharp knife are the best utensils for cutting the dough. Cut edges should be crisp to keep the layers separate so that they puff during baking. Always bake puff pastry in a conventional oven and keep in mind that darker baking sheets cook faster.

Vanilla pastry cream is the standard filling for a Napoleon. This is a very short recipe for making quick Napoleons.

1 Package of frozen puff pastry dough

2 Packages of Vanilla instant pudding

1 Bottle of a good chocolate fudge or chocolate drizzle

3 Ounces of confectioners sugar

Prepare instant pudding according to package directions. While pudding is chilling follow directions for thawing, unfolding and baking puff pastry sheets. Cut into desired shape at bake at 400° for twelve minutes or until golden. Pay close attention to baking time, sheets burn easily. Let cool to room temperature.

To assemble you will place a layer of pastry in bottom of a sheet pan. You will then gently spread with a layer of pudding, then another layer of pastry. Repeat the layering process until ingredients are used up. You will then heat your chocolate fudge until it is at a pouring consistency. You will pour or drizzle over the tops of your Napoleons, and dust very lightly with the confectioners sugar. You will need a serrated knife to cut these into bars to sreve. Keep refrigerated until serving time.

If you want to substitute a low fat, or zero fat pudding in this recipe, there is still enough sugar to give it flavor with half or no fat in the pudding.

How to Sharpen and Hone Your Chef Knife

Knowing how to sharpen your knife is an essential skill every chef must have. This is because a sharp chef knife is one of the chef's most essential tools, since a quality cut helps preserve the true flavors of the ingredients used.

Cutting with a dull knife can damage the ingredients and change their taste and appearance for the worse. A dull knife can also injure the chef because it is more prone to slipping when cutting food. The best chefs end their workday by sharpening their knives and may even sharpen the knives again just before they use them.

There are two methods of sharpening your knife - using a whetstone or steel. Sharpening a knife with a stone is considered the best way of keeping the edge of your knife sharp, while steel is used to give knives a quick sharpening by chefs who have little time to devote to the task. Whichever method you use, make sure you get the highest quality of stone or steel that you can afford, so that they will last longer and save you money in the long run. And, of course, better-quality products will give you better results.

Here is the basic procedure of how to sharpen your knife with a stone. Prepare the stone by moistening the surface with water to lubricate it. Put the stone in water and if you see bubbles, then you need to immerse it in shallow water for ten to twenty minutes; otherwise, just keep the surface moist. Hold the blade at a ten- to twenty-degree angle to the stone; smaller angles result in sharper edges but larger angles mean that the knife is less prone to chipping.

While holding the knife at the desired angle, slide the knife, starting at the tip, from the end of the stone closest to you to the farther side using a firm pressure. Return to the near side, and then repeat, overlapping sections of the knife during the process. Continue until you've created a burr (rough upturned edge) on the opposite side of the blade. Repeat the process on the opposite side.

Meanwhile, here is how to sharpen your knife using a sharpening steel. Hold the knife with your cutting hand and the steel with the other hand against the blade. Hold the knife at an angle to the steel with the handle end of the blade touching it. Draw the knife across the top of the steel using light to medium pressure and moving from the bottom to the tip.

Trained chefs are supposed to be good cooks, but I have had lousy meals at famous restaurants. I have also had five-star meals in friends' homes. One friend served pork tenderloin, sourdough bread, Napa cabbage slaw, and chocolate souffle. Her simple meal was a gourmet meal in every sense of the word.

A good cook can use equipment. The cook can use a mixer, food processor, blender, immersion blender, grill pan, and other appliances. This cook is also familiar with kitchen tools like a whisk, mellon-baller, and microplane.

A good cook masters basic techniques. The cook knows how to saute, poach, braise, steam, grill, shallow-fry, stir-fry, and microwave food. In addition, the cook knows how to make a white sauce, thicken sauces with flour and cornstarch, beat egg whites, and temper eggs.

A good cook relies on fresh ingredients. Seasonal fruits and vegetables are the starting point for meals. The cook buys fresh fish and flavorful cuts of meat.

A good cook sharpens knives. As the old adage says, a dull knife is a dangerous knife. For this reason and cutting ease, a good cook cares for knives properly, keeps them sharp, and stores them safely.

A good cook practices food safety. He or she washes hands thoroughly before touching food and during preparation. Separate cutting boards are used for meat and chicken and washed well after use.
Cold food is kept really cold and hot food is refrigerated promptly after a meal.

A good cook plans interesting menus. Some cooks prepare recipes from one culture, while others prepare recipes from many. Each part of the meal fits together like a fascinating puzzle.

A good cook makes simple things well. Only a good cook can make rich coffee, fabulous soup, and fluffy scrambled eggs. Though the cook is able to prepare complex recipes, he or she excels at the simple ones.

A good cook cleans up the kitchen. My mother told me this when I was a teenager and I have never forgotten it. She was an excellent cook and I learned a lot from her. She taught me to take good care of pots, pans, and dishes.

A good cook always adds love. You cannot rush when you are adding love, you must pay attention to what you are doing, and take the time to do it. Whether it is the first ingredient or last, a cook's love is what makes food so delicious.
